The plant I'm working at has a large grinder to grind PVC pipe. This process takes up a significant amount of energy (not sure how much). Will this system allow me to track how much energy the process takes up each time the grinder is run?

If your grinder motor is single phase and draws less than 100 A (23-24 kW on a 230-240 V supply) then yes, the emonTx with the standard voltage and current transducers will be fine. If it's 3-phase, it'll not be a perfect measurement but we can assume the three phases will be fairly accurately balanced, measure one and a simple tweak of the numbers will give the correct result.
Look at the rating plate on the motor (or on the starter) for the basic information.
