I have added some more dashboards and the header strip has become a lot deeper and I can no longer get to the edit/save buttons even by scrolling. Is there a way around this?

Yes, go to Setup > Dashboards and untick 'published' for most of them. You should only have one or two published.
'publishing' them adds a quick access link to the menu, and there is only room for one or two.
